Mineral driven notes are earthy with some sweet background notes of cherry blossom and nectarine.
The flavors are full of granite, limestone, and pencil lead, intermixed with garden herbs like tarragon and Thai basil. The texture is soft and almost creamy, enhancing the mineral notes of clay and clean fresh linens. Refreshing, elegant, and unique.
Agaves are cooked in an in-ground pit, crushed by animal drawn tahona, fermented in above ground wooden containers, and double distilled in copper pot stills.
