Dried strawberry and pineapple aromas mix with tarragon and woodsy rosemary.
The fruitiness comes through strong and well integrated, showing off flavors of cherry, raisin, and pineapple with cinnamon undertones. A cool herbal quality keeps the flavors refreshing and uplifted, balancing the rich mouthfeel. The finish is powerful and long lasting, expressing the clay flavor and texture.
Agaves are cooked in an in-ground stone lined pit, crushed by a mix of hand and machine, and open air fermented in 1000 liter wooden vats with natural ambient yeasts for 8-20 days, and double distilled in 100 liter clay stills. A third distillation is done with their house made pechuga blend of seasonal fruits, nuts and spices.
