Classic blue agave flavors like sea salt, lime zest, and candied orange are ripe and juicy. The smokiness adds to the salinity, backed by savory spices and green chili heat. There is a delicacy to the flavors and texture, creating a nice interplay between bold and reserved.
Agaves are cooked in an in-ground stone lined conical pit; cooked agaves are tahona crushed and the mash is fermented in stainless steel tanks. Distillation is done in a copper pot still, then aged in glass for 60 days.
