The flavor starts off with gentle herbs, chalky minerals, clay, and coffee. Notes of smoked meats, sea salt, and baked stone fruit turn into a rich blend of sweet and salty. The texture is rich enough to support the variety of flavors while leaving the palate clean, with the slightest hint of chili spice.
Agaves are cooked in an in-ground stone lined conical pit; cooked agaves are crushed by hand with ax and mallet. Fermentation is done in in-ground wooden and clay tanks. Distillation is done in a wooden and copper still, and then aged in glass for 60 days.
