The flavors start out light, with mixed citrus zest, turning to earthy baked pineapple fronds, red chili spice, and a gentle wisp of smoke. More roasted fruit notes are lightly caramelized, showing peach and demerara sugar swirling around the earthy core.
Agaves are cooked in an in-ground pit, crushed by animal drawn tahona, fermented in above ground wooden containers, and double distilled in copper pot stills.
