Background
Launched in 2020, Lalo Tequila was co-founded by Eduardo “Lalo” Gonzales, the grandson of Don Julio Gonzales, and his business partner David Carballido after they were inspired by a private small batch project in Guadalajara. The focus is on the natural quality of agave and a traditional process; the brand is anchored by a “less is more” philosophy. Lalo produces only unaged tequilas, combining traditional processes like brick oven steam cooking and copper pot distillation, alongside modern advances including a roller mill for extraction and champagne yeast fermentation.
