El Buho Espadin Capon tasting notes

Distinct minerality on the nose is crisp and bright, revealing earthy layers and an overall bold profile. 


Echoing the aromas the minerals are front and center in the mouth, followed by custard-like fruitiness and a creamy texture to match. Slightly caramelized notes combined with the herbal notes create layers that unfold one by one the more you sip. 


Made exclusively from ‘capon’ agaves: agaves that were left in the ground to mature for an additional year after their quiotes were cut. This process is used to develop more complexity in the final product. This batch of 937 liters was made in December 2019 from 10 year old agaves. 

Tess Rose Lampert is a wine and spirits educator with a focus on mezcal. She is a frequent contributor to Mezcalistas and has developed programming for Mexico in a Bottle and Spirited Conversations. She has an Advanced Degree from the Wine & Spirit Education Trust, Spanish Wine Educator Certificate, an MA from the University of East Anglia, UK, in Philosophy of Food and Drink and a BA from Bard College in NY.
