Nose: There is a lot going on aromatically, combining notes of tarragon and basil with meyer lemon and mixed citrus. Each time there is more unfolding in the glass.
Taste: Cooked agave notes are front and center, showing off roasted and dehydrated pineapple. An earthy core of green pepper and herbs balances the sweet notes. As it opens up, characteristics of lime leaf and lychee emerge. The texture is soft and mouth-filling, making it a nice choice to sip on its own or pair with delicate foods like shellfish and white asparagus.

Background
Cascahuin is a gold standard among traditional tequila producers and a labor of love. The Rosales family owns and operates the brand at their distillery, which was founded in 1956–though the family heritage stretches back to 1904. The name of the brand translates to “mountain of light” and celebrates using the highest quality agaves possible. The small operation is hands-on, with careful attention to detail at every step. Their production methods incorporate traditional brick oven cooking, various fermentation techniques and containers, crushing by mill and tahona, and unique stills that incorporate copper and steel. In Mexico, many of the expressions are released at 38% ABV rather than the typical 40% ABV for export.
