Background
Don Fulano was launched in 2002 as a joint venture with industry icons Enrique Fonseca as the master distiller and Sergio Mendoza as the blender. The brand draws on the resources and tradition of five generations of agave growers and distillers, with quality and accessibility as the driving forces. Made from estate grown agave at the La Tequileña distillery, which is known to blend tradition and innovation. The agaves are steamed at low pressure in autoclaves and left to rest for 12 hours, then crushed with a house-engineered screw and fermented in open-air stainless steel vats with proprietary yeasts. A portion of the agave fibers are fermented along with the juice. Distillation is hybrid, with about 85% of the blend coming from double distillation in copper pot stills, and 15% from a double column copper Coffey still. While Don Fulano is not generally one of the most well-known brands, it has been an industry insider favorite since its inception.
