Nose
Green peppercorn, touch of marzipan
Taste
This is all silky body as it coats your mouth with a touch of sparkle on the tail. It leaves you with a sated sensation and some roast agave and caramel.
Method / Background Notes
Roast: Underground conical oven with oak and pine wood.
Crush: Mechanical shredder.
Fermentation: Wild fermentation in sabino and pine vats.
Distillation: Double distilled in copper still.
The Bruxo 2 is classified as an abocado according to NOM 70 because Herminio Coronado infuses roasted agave after the second distillation. Bruxo calls this a “Joven- Abocado con Corazon de maguey” and attributes the slight yellow hue to this mezcal to that process.
Previously the Bruxo 2 was prominently labeled a “Pechuga de Maguey.” That label is still on the new bottles but in a smaller font while the “Abocado con Corazon de Maguey” receives more prominent billing. Pechuga generally means that something was suspended over the mash during distillation.
