Nose

Bursting with citrus and herbs: tangerines, aloe, tarragon culantro, and a whiff of vanilla. The aroma flirts between bold and demure.  

Taste

Tart and juicy, sour orange candy with a mineral core. Spice blankets the finish, cayenne-like warmth, mouthwatering like a tasty salsa or sal con chile. The flavors are complex and interactive. 

Method/Background 

Made from Madrecuishe between 10-14 years old, this mezcal is crafted in the traditional artisanal method. Cooking takes place in an in-ground oven with river rocks before being milked with a stone tahona, followed by fermentation in wooden tanks, and finally double distillation in copper pot stills.

Tess Rose Lampert is a wine and spirits educator with a focus on mezcal. She is a frequent contributor to Mezcalistas and has developed programming for Mexico in a Bottle and Spirited Conversations. She has an Advanced Degree from the Wine & Spirit Education Trust, Spanish Wine Educator Certificate, an MA from the University of East Anglia, UK, in Philosophy of Food and Drink and a BA from Bard College in NY.
