What is a raicillero? The word describes a producer of raicilla, a regional mezcal from Jalisco. Traditionally, raicilla is created in rustic distilleries called tabernas; raicilleros may also be called taberneros. In alignment with the rest of mezcal culture, a distinguished raicillero will be referred to as “maestro.”
The liquor is made in two distinct regions, and the two types of raicilla significantly vary in flavor and production methods. For example, coastal producers use Filipino stills, while alembique, or alembic, stills are more common in the mountains.
