Nose: An exhilarating blend of sweet pineapple, papaya, mineral rich soil and iron create a dynamic nose that is both tropical and earthy.
Taste: Lip smacking and bright, the tropical notes are fresh and ripe. The fruitiness gives way to tingly red chilies, comal toasted tomatoes, and hearty green herbs. Substantial in texture and flavor, it is tasty on its own, but is begging to be paired with equally complex dishes to bring out its full charm. Fantasy dishes to pair with this would be tuna tartare with chipotle crema, or a plantain molote con chorizo.

Background
Made from agaves sources from a total of three family fields, this 100% Cuishe mezcal was made in the traditional method with a seven day cook in a stone oven, tahona crushing, six day fermentation in pine wood vats, and double distillation in small copper pot stills. Only wild ambient yeasts were used for natural fermentation. Distilled in 2022, this mezcal rested in stainless steel for around 2.5 years before being bottled and released. Fewer than 850 750ml bottles were produced from this batch.
