Known as the “king of agaves,” Tobalá grows wild in the rocky mountains of Miahuatlán, often taking more than 15 years to mature. Unlike cultivated agaves, it can’t be farmed — it must be foraged in the wild, much like hunting for rare mushrooms in the forests of Santa Cruz. The result is a mezcal that’s both rare and expressive, with floral, herbaceous notes that reflect its untamed origins.
