Mode of Reproduction
Jabali means "wild boar" and this agave has that colloquial name because its pencas can curve downwards like a wild boar's tusks. Jabali are notoriously difficult to distill, they bubble up with foam during fermentation and even in the distillation containers, most likely because of the saponens in the agave. Grown in the Oaxacan regions of Sola de Vega, Sierra Juarez, East Tlacolula, West Tlacolula, Zona Refrescadera, Miahuatlan, Zoquiteco, Altos Valles, Chontal
