Join us for the launch event of London Mezcal Week – A 6 course regional Mexican dinner & Mezcal pairing with Edson Diaz-Fuentes and Santo Remedio
Edson Diaz-Fuentes and his wife Natalie started Santo Remedio to bring true Mexican flavours to Londoners. One of the most exciting Mexican chefs in London and has been cooking up the very best, traditional cuisine since the start of Santo Remedio back in 2013, drawing inspiration from the food he grew up eating in Mexico City, at his grandmother’s table, its markets and street stalls. His cooking is also influenced from his time travelling all over Mexico like to the Yucatan, Puebla and Baja California.
Edson uses unique ingredients such as cactus, grasshoppers and cascabel chilies and many dishes use traditional slow cooking techniques to give his food amazingly rich, deep flavours. Santo Remedio popped up in Shoreditch, where it received critical acclaim from all the top UK food critics including Jay Rayner, Giles Coren and Grace Dent. We are very excited that Santo Remedio will re-open their doors as a mexican Cantina & Comedor later this Summer in a new permanent site.
ABOUT THE FOOD – The Santo Remedio dinner will be a 6 course feast celebrating dishes from all over Mexico, some of which have never been served before in London. Edson and his team have created a totally unique menu for this exciting event celebrating the start of London Mezcal Week. This includes Chicatana ants, one of Oaxaca’s most prized delicacies only available once a year in the rainy season. You will be the first to try this dish at the new Santo Remedio restaurant. A traditional mole negro with over 20 ingredients including chillies, nuts, chocolates and dried fruit will also be served. And a pig’s cheek tamal with salsa de molcajete will also be among the exceptional dishes you will try on the night.
